
Does your family ever get the winter doldrums? I know in my family we love the winter, but sometimes the cold, bitter weather makes us long for the warm summer days. When my kids start to get down I like to surprise them with a little reminder of summer in the form of Sundae Cupcakes. I bake chocolate cupcakes, cover them with Cool Whip Frosting instead of ice cream, and decorate them with all their favorite sundae toppings. These always bring out the sunshine and puts a smile on those sad little faces. Since winter has settled in for everyone I thought I would share this recipe idea with you all. Maybe you can surprise your kiddos with some summer fun as well.

HA few days ago hubby and I ran away to the store to grab all the ingredients for the Sundae Cupcakes so we could surprise the kids. You can read all about our shopping trip in my Google+ album. I chose to use Cool Whip Frosting on these cupcakes because it is perfect for the job. Not only does the frosting taste divine, but the texture and composition of the frosting allow it to be piled and molded onto the cupcake to form the needed ice cream look. Of course each time we use the Cool Whip Frosting a lot of it disappears from the container before it ever gets to the cupcake – don’t judge! Spoons and finger seem to appear out of nowhere to steal it away straight from the container!

If your family loves hot fudge sundaes they will love these Sundae Cupcakes. Cool Whip Frosting, hot fudge, sprinkles, nuts and a Marciano cherry top these chocolate cupcakes to make a mouthwatering sweet treat. You are limited only by your imagination.
- Ingredients
- Box of your Favorite Cake Mix
- Hot Fudge
- Cool Whip Frosting
- Nut Topping
- Sprinkles
- Marciano Cherries
- Instructions
- Make the cupcakes as directed on the mix and let them cool completely.
- Liberally spread the Cool Whip Frosting until it forms a dome shape similar to an ice cream cone.
- Pour warmed hot fudge over each cupcake.
- Decorate the cupcake with assorted sprinkles and nuts, as desired.
- Place a Marciano Cherry on the top of each cupcake and serve.
When decorating the cupcakes I just scooped lots of the frosting onto the cupcake and molded it until it created a tower that looked similar to an ice cream cone. The Cool Whip Frosting has the perfect texture and density to sit nicely piled up and stay in place. Once the frosting is in place its just a matter of decorating them to your likes and taste buds. I typically pour on chocolate sauce first and then sprinkle on nuts and any type of colored sprinkles. Make sure to top the Sundae Cupcake off with a Marciano Cherry to bring the full effect together.

Dad had kept the kids away while I was baking and decorating so they were completely surprised when they came in and spotted the Sundae Cupcakes. The kids were thrilled to get to scarf them down and it definitely made their day.
